Crispy Mustard Chicken

This crispy mustard chicken recipe inspired by Ina Garten is a fantastic idea for dinner served with a simple salad.

Ingredients

  • 2 cups panko (Japanese breadcrumbs)
  • 1 tsp fresh thyme leaves
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 750 g / 1½lb chicken thighs (8 medium thighs)
  • 4 tbsp Dijon mustard
  • 1-2 tbsp olive oil

Instructions

  1. Preheat the oven to 200°C/390°F.
  2. Combine the breadcrumbs, thyme, garlic powder, salt and pepper in a shallow bowl.
  3. Brush the chicken thighs with the mustard then dip into the breadcrumbs, ensuring every piece of chicken is coated.
  4. Transfer to a baking dish then drizzle over the olive oil.
  5. Bake for 20-30 minutes or until the crust is golden brown and the chicken is cooked through.
  6. Remove from the oven then serve with lemon wedges and side dishes of your choice.
