Crispy Outback Steakhouse Aussie Fries (Copycat Recipe)

Perfectly crispy french fries topped with melted Colby Jack cheese and crispy bacon pieces just like the famous Outback Steakhouse appetizer. This easy copycat recipe brings the restaurant favorite right to your kitchen!

Ingredients

  • 2 pounds French Fries
  • 1 cup Colby jack cheese shredded
  • 4 ounces Bacon cooked crisp
  • vegetable oil for frying

Instructions

  1. Divide the bag of fries in half and use the other half later.
  2. Heat oil to 350 degrees. If you do not have a thermometer, make sure the oil is hot enough so that when you set a French fry in the oil, it will cook immediately. If the French fry sinks to the bottom and barely bubbles, it is not hot enough.
  3. Fry the potatoes in small batches. They are done when they are golden brown and float to the top. (I like to use a Dutch oven). Be sure to drain the potatoes on paper towels. You can keep them warm in the oven while the other fries cooking.
  4. When all French fries are cooked and drained, place them on a platter.
  5. Salt the French fries if you like and sprinkle on cheese and cooked bacon.
  6. Pop these back into a warm oven until the cheese begins to melt.

Notes

  • Choose the right fries: Thicker-cut frozen french fries hold up better under the toppings than shoestring varieties
  • Freshly grate your cheese: Pre-shredded cheese contains anti-caking agents that prevent smooth melting
  • Layer strategically: Place a thin layer of cheese directly on the hot fries first, then bacon, then more cheese for the best melt
  • Keep everything hot: Warm your serving platter in the oven before adding the fries to maintain temperature longer
  • Season in stages: Add a light sprinkle of salt right after frying, but before adding toppings, for better flavor distribution
  • Serve immediately: These fries are at their absolute best when served piping hot with the cheese still gooey
  • Go easy on the ranch: If using the ranch dipping sauce, serve it on the side rather than drizzling over the fries to maintain crispiness
