Crispy Red Potatoes In The Air Fryer

Ingredients
- 1.5 lbs red potatoes
- 1 tbsp olive oil
- 1 tsp herbes de provence
- ½ tsp salt
- ½ tsp ground pepper
Instructions
- Wash and cut the potatoes into uniform pieces. Place them in a bowl with enough water to cover them. Stir a tablespoon of baking soda to the water and steep them for 10 minutes. This will draw the starch out and make the potatoes crispy.
- Drain the water and dry them using paper towels.
- In another bowl mix the oil, Herbes de Provence and salt and pepper together. Add the potatoes and mix.
- Place potatoes into the air fryer basket. If your air fryer is smaller, then place only half the quantity of potatoes in the basket. The other half can be added once the first batch has cooked.
- Air fry at 400 degrees F for 18-20 minutes, or until the potatoes are golden brown and have crispy edges.
