Ingredients

  • 3 medium sweet potatoes cut into 1-inch cubes
  • 1 ½ tablespoons olive oil
  • ½ teaspoon salt
  • 1 teaspoon roasted veggie seasoning

Instructions

Prep:

  1. Preheat the oven to 400F and line a large baking sheet with parchment paper. 
Season:
  1. Place the potatoes onto the baking sheet and drizzle with olive oil. Season with salt and seasonings. Toss to combine and spread out in an even layer onto the baking sheet. 
Bake:
  1. Bake for 30 minutes or until the potatoes are tender through the center and edges are lightly browned. 
  2. Remove from the oven and serve.
