- 24 potatoes Blushing Belle or other Little Potato Company variety (sliced in half)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons Za’atar
- 1 teaspoon salt
- ½ teaspoon pepper
- minced scallions (optional garnish)
Instructions
- Pre-heat oven to 450 degrees and line a baking sheet with foil.
- In a small bowl, toss potatoes with olive oil, za’atar, salt and pepper to coat. Spread on baking sheet in a single layer and roast until crispy, about 20 minutes. Sprinkle with scallions to serve if you wish.
