Crock Pot Balsamic Chicken recipe

Ingredients

  • 3 boneless skinless chicken breasts
  • 1 can diced tomatoes (14.5 oz can)
  • 1/2 cup balsamic vinegar
  • 1/2 onion sliced
  • 1/2 Tablespoon Italian seasoning
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper

Instructions

    Cup of Yum
  1. Place chicken breasts in the bottom of crockpot.
  2. Add in the sliced onion.
  3. Season with the garlic salt and pepper.
  4. Toss in the can of tomatoes
  5. Pour Balsamic vinegar over it all
  6. Cook on low for 6 to 8 hours or high for 3-4 hours.
  7. Serve as is or over your favorite type of pasta. Enjoy!

Notes

  • I love serving this over pasta but it tastes great as is too. 
  • *Refrigerate the leftovers in an air tight container for up to 5-7 days. 
  • *I used fresh chicken for this recipe but this recipe works great with frozen chicken as well.  If using frozen chicken, I would increase time by 30 minutes.
