Crock Pot Chicken Tacos Recipe

Ingredients

  • 2 pounds boneless chicken breasts or boneless chicken thighs
  • 1 1 ounce envelope fajita seasoning or taco seasoning mix
  • ½ cup lime juice
  • ½ cup honey
  • ¼ cup chicken stock
  • 3 cloves garlic minced
  • ½ teaspoon paprika

Instructions

  1. Add the chicken breasts to your slow cooker.
  2. Mix the fajita seasoning, lime juice, honey, chicken stock, garlic, and paprika in a small bowl.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover the slow cooker and cook on low for 4-6 hours or high for 3-4 hours.
  5. Remove the chicken, shred it, and return it to the juice in the slow cooker.
  6. Serve the shredded chicken on tortillas with your favorite taco toppings.

Notes

  • If using frozen chicken, make sure to thaw it completely in the fridge before putting it in the slow cooker.
  • You can use an electric hand mixer to shred the chicken. Keep the mixer on low speed so the chicken doesn’t fly out of the mixing bowl.
  • Make fajita seasoning by combining cumin, chili powder, paprika, garlic powder, and onion powder.
  • If using frozen chicken, make sure to thaw it completely in the fridge before putting it in the slow cooker.
  • Use a crock pot liner to make cleanup quick and easy.
