Ingredients
- 2 pounds boneless chicken breasts or boneless chicken thighs
- 1 1 ounce envelope fajita seasoning or taco seasoning mix
- ½ cup lime juice
- ½ cup honey
- ¼ cup chicken stock
- 3 cloves garlic minced
- ½ teaspoon paprika
Instructions
- Add the chicken breasts to your slow cooker.
- Mix the fajita seasoning, lime juice, honey, chicken stock, garlic, and paprika in a small bowl.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover the slow cooker and cook on low for 4-6 hours or high for 3-4 hours.
- Remove the chicken, shred it, and return it to the juice in the slow cooker.
- Serve the shredded chicken on tortillas with your favorite taco toppings.

- If using frozen chicken, make sure to thaw it completely in the fridge before putting it in the slow cooker.
