Ingredients
- 2 pounds boneless Skinless Chicken Breasts
- 1 cup unsweetened pineapple juice
- ½ cup soy sauce
- ½ cup brown sugar
- 1/3 cup ketchup
- ½ teaspoon ground ginger
- 2 teaspoons minced garlic
- 2 Tablespoons cornstarch
- 2 Tablespoons cold water
For Serving:
- green onions diced
- sesame seeds
Instructions
- In a medium mixing bowl, stir together the pineapple juice, soy sauce, brown sugar, ketchup, ground ginger and minced garlic.
- Place the chicken breast in the crock pot. Pour the sauce on top.
- Cover and cook on low for 5-7 hours or on high for 3 hours.
- Remove the chicken, shred.
- Stir together the cornstarch and cold water together in a small bowl. Stir this mixture and the shredded chicken back into the crock pot.
- Serve as is or over rice and enjoy!
