Ingredients
- 1 1/2 pound chuck roast cut into 1 1/2 inch pieces or pre-cut stew meat
- 1/4 cup flour
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 pounds Yukon Gold potatoes quartered
- 1 pound baby carrots
- 1 onion diced
- 1 tablespoon minced garlic
- 5 cups beef broth
- 1 8 oz can tomato paste
- 1/4 cup red wine vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dried thyme
- 2 bay leaves
- Fresh parsley chopped to top
Instructions
- In a large bag, place the roast, flour, salt and pepper. Toss to coat. Place in the bottom of the crock pot.
- Pour everything else on top.
- Cover and cook on low for 8 hours or until beef is tender
- Remove the bay leaves and serve.
- Top with fresh parsley.
