Ingredients

  • 3 boneless skinless chicken breasts
  • 2 cups chicken broth
  • 1/2 onion diced
  • 1/2 cup salsa verde
  • 1 teaspoon minced garlic 
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 oz cream cheese
  • 1/2 cup heaving whipping cream
  • 2 cups Monterrey Jack cheese
  • 1 avocado diced
  • 1 Roma tomato diced

Instructions

    Cup of Yum
  1. Place everything but the cream cheese and whipping cream in the crock pot.
  2. Cook on low for 8 hours
  3. Shred the chicken.
  4. Stir in the heavy cream and the cream cheese until melted
  5. Top with Monterrey jack cheese, diced tomatoes, and avocados
