Crock Pot Lentil Soup Recipe

Ingredients

  • 16 ounce brown lentils
  • 1 small onion finely chopped
  • 2 carrots peeled finely chopped
  • 2 talks celery diced
  • 1 can diced roasted tomatoes (15 oz)
  • 6 cups chicken broth
  • 1 teaspoon minced garlic 
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh parsley

Instructions

    Cup of Yum
  1. Add all ingredients to the crock pot except for the parsley.
  2. Cover and cook on low 6-8 hours, or cook on high for 3-4 hours until the lentils are cooked through.
  3. 15 to 30 minute before serving stir in the parsley.
  4. Serve warm and enjoy!

Notes

  • *Refrigerate the leftovers in an air tight container for up to 3-4 days.
