Ingredients
- 16 ounce brown lentils
- 1 small onion finely chopped
- 2 carrots peeled finely chopped
- 2 talks celery diced
- 1 can diced roasted tomatoes (15 oz)
- 6 cups chicken broth
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon fresh parsley
Instructions
- Add all ingredients to the crock pot except for the parsley.
- Cover and cook on low 6-8 hours, or cook on high for 3-4 hours until the lentils are cooked through.
- 15 to 30 minute before serving stir in the parsley.
- Serve warm and enjoy!
