Crock Pot Mexican Shredded Chicken

Ingredients

  • 3 large boneless skinless chicken breasts
  • 1 can 14.5 oz diced tomatoes
  • 1 can 4 oz green chilies
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons chili powder
  • salt and pepper to taste
  • 1 cup chicken broth

  1. Place the chicken breasts in the crockpot.
  2. In a separate bowl, mix the diced tomatoes, green chilies, onion, garlic, cumin, paprika, and chili powder. Season with salt and pepper to taste.
  3. Pour the tomato and spice mixture over the chicken in the crockpot; Add chicken broth to the crockpot.
  4. Mix thoroughly to ensure the chicken is evenly covered with the ingredients.
  5. Cover and cook on low for 6-8 hours, or until the chicken is tender and easily shreds with a fork.
  6. Once the chicken is cooked, shred it using two forks inside the crockpot. Stir to mix well with the sauce.

Notes

  • Chicken: This recipe uses boneless, skinless chicken breasts for leaner meat, but you can also use boneless, skinless chicken thighs for more flavor and moisture.
