Crock Pot Pork Tenderloin Tacos

Ingredients
- 2 pounds pork tenderloin
- 1 packet taco seasoning (1 ounce packet)
- 1 cup salsa (your choice of mild, medium, or hot)
- 1/2 cup chicken broth
- corn tortilla for serving, or flour tortillas
- lettuce shredded/diced/sliced for toppings
- tomato
- cheese
- sour cream
- avocado
Instructions
- Place the pork tenderloin in the crock pot.
- Sprinkle the taco seasoning evenly over the pork.
- Pour the salsa and chicken broth over the seasoned pork.
- Cover and cook on low for 4-6 hours, or until the pork is tender and shreds easily with a fork.
- Once cooked, shred the pork using two forks directly in the crock pot, mixing it with the cooking juices.
- Warm the tortillas in a skillet or microwave.
- Assemble the tacos by placing some of the shredded pork on each tortilla.
- Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and sliced avocado, or your favorite taco toppings.
Notes
- Choose pork tenderloins that are pinkish-red in color with some marbling for the best flavor and tenderness. Avoid pieces that look dry or have dark spots.
- Pork tenderloin is a relatively lean cut of meat, so be careful not to overcook it. Check the tenderness at 4 hours and continue cooking only if necessary. Overcooking can result in dry meat.
- Shred the pork in the crock pot so it can absorb the cooking juices and salsa, which keeps it moist and flavorful.
