Crock Pot Roast with Potatoes Recipe
This Crock Pot Roast with Potatoes recipe layers beef roast and halved potatoes in a slow cooker, topped with a mixture of cream of chicken soup, softened cream cheese, and ranch seasoning mix. The slow cooking method makes the beef tender and infuses the potatoes with flavor. The creamy sauce helps keep the meat moist during cooking and adds richness to the dish, great for an easy main course meal.
Ingredients
- 2 1/2 lb roast beef
- 1 lb potato cleaned and halved
- 1 cream of chicken soup 10.5 oz, canned
- 8 oz cream cheese softened, package
- 1 oz ranch seasoning mix envelope
Instructions
- Coat crock pot with nonstick cooking spray.
- Placed halved potatoes on bottom of the crock pot and place meat on the potatoes.
- In a bowl whisk together soup, cream cheese and dressing mix. Pour over meat and potatoes in slow cooker.
- Cover and cook on low for 9-10 hours or on high for 4 1/2 to 5 hours.
Notes
- Searing the roast before adding it to the crock pot adds flavor; heat olive oil and brown the roast on all sides for about 5 minutes per side.
- The recipe uses standard slow cooker timing: 9-10 hours on low, or 4.5-5 hours on high for tender results.
