Ingredients

  • 1/2 onion diced
  • 1 green bell peppers diced
  • 2 teaspoon minced garlic 
  • 2 cans cans black beans (15 oz.) drained and rinsed
  • 1 can can diced tomatoes (15 oz.)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 3 cups chicken broth
  • 2 medium sweet potatoes peeled and diced

Instructions

    Cup of Yum
  1. Add everything in the crock pot.
  2. Cover and cook on low for 4-5 hours on low.
  3. Serve warm with your favorite toppings: sour cream, avocados and cilantro.

  • *Refrigerate the leftovers in an air tight container for up to 5-7 days.
