Crockpot BBQ Chicken Thighs
Crockpot BBQ Chicken Thighs slowly cook boneless, skinless chicken thighs in a flavorful mix of BBQ sauce, brown sugar, apple cider vinegar, and spices. The chicken becomes tender and infused with a sweet, tangy, and mildly spicy sauce. This hands-off dish is versatile for serving whole or shredded, fitting well with sides like pilaf, baked potatoes, or sandwiches.
Ingredients
- 3 lb. chicken thighs about 8-12 chicken thighs depending on size, boneless, skinless, thawed
- 2 cups BBQ sauce I like Kinder's or Stubb's
- 2/3 cup brown sugar light or dark, packed
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. olive oil
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. chili powder
- 1/2 tsp. ground mustard
- 1/4 tsp. cayenne pepper
- 1/8 tsp. black pepper
- parsley fresh, for garnish, optional
Instructions
- Add the chicken and all ingredients to your slow cooker. Stir gently to combine.
- Cook on high for 3-4 hours or low 5-6 hours or until chicken is cooked and tender.
- Keep whole and garnish with parsley & enjoy with pilaf, baked potatoes, veggies or shred and add to tacos, sandwiches, sliders, etc.
Notes
- Store cooked chicken thighs in an airtight container in the fridge for up to 3-4 days.
- Can be served whole or shredded for sandwiches, tacos, or sliders.
- Garnish with fresh parsley for added color and freshness.
