Crockpot French Toast

This irresistible crockpot French toast is the ultimate morning breakfast.

Ingredients

  • 2 large eggs
  • 1 cup (250ml) milk
  • ¾ cup (175ml) double cream
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp ground nutmeg
  • 3.5 ounces (100g) blueberries
  • 8 brioche rolls if your dish is shallow, cut in half again the other way to make shorter pieces, each one split in half
  • A handful of sliced almonds
  • Strawberries to serve
  • icing sugar for dusting

Instructions

  1. Whisk together the eggs, milk, double cream, vanilla and nutmeg until combined
  2. Cut brioche rolls into rough pieces.
  3. Lay half the cut brioche rolls in the slow cooker bowl along with half the blueberries and almonds.
  4. Then layer with the remaining brioche.
  5. Pour all the egg mixture over the bread and scatter over the remaining blueberries and almonds.
  6. Put the bowl in the cooker, close the lid, switch it on, select the slow cooker programme and set the time for 2.5 hrs.
  7. Serve the slow cooker brioche French toast with extra fruit, nuts and maple syrup.
