Crockpot Honey Mustard Pork Chops

- 1.5 pounds boneless pork chops
- 1/2 cup yellow mustard
- 2 tablespoons liquid honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup beef broth
- pepper to taste
- 1 tablespoon cornstarch + 2 tablespoons cold water
Instructions
- Add all ingredients except for the pork chops and cornstarch to a bowl and whisk/stir them together until combined. Pour it into your Crockpot.
- Add the pork and give it a stir to ensure that the pork is mostly covered (ok if it's not all totally submerged in the sauce).
- Cook on high for 3-4 hours or on low for 6-8 hours.
- Mix the cornstarch with the cold water and add it to the Crockpot about 15 minutes or so before serving. Stir it in and then put the lid back on your slow cooker and let the sauce thicken up a bit, then serve.

Notes
- I tested this recipe with fairly thin boneless pork chops (there were 6 of them in the 1.5 pounds). For thicker, bone-in pork chops, cooking time may vary and/or be on the higher end of the suggested cooking times.
- You can brown the pork chops ahead of time if you wish, but you don't need to.
- I used a "sweet" yellow mustard. You could definitely try different varieties of mustard out in this recipe or even combine 2 different kinds (e.g. Dijon with something milder).
- Serves 4-6 depending on how much people eat.
