Crockpot Lentil Soup Recipe
Healthy and filling lentil soup recipe with added veggies for a heartier soup recipe.
Ingredients
- 1 Tbsp olive oil
- 1 Large sweet onion diced
- 2 medium carrot sliced
- 1 bell pepper red, yellow, or orange
- 3 garlic pressed, cloves
- 2 celery sliced, stalks
- 1 lb button mushrooms halved or quartered if too big
- 1.5 Cup brown lentils rinsed, or green lentils, dried
- 8 Cups broth low sodium
- 1 Tbsp Italian seasoning
- sea salt to taste
- black pepper to taste
- 1 lemon zest and juiced
- 1/2 Cup Parmesan Cheese grated
- thyme fresh, to garnish
Instructions
- Add all the ingredients, except for Parmesan cheese, lime juice and zest to the slow cooker.
- Cook on LOW for 7-8 hours, or HIGH for 3-4 hours.
- Once the time is up, stir in the remaining ingredients: Parmesan cheese, lime juice, and zest.
- Season with salt and pepper to taste, and garnish with fresh thyme and more lemon or lime if desired. Enjoy while hot!
Notes
- use any oil of choice
- you may add any other veggies
- chop mushrooms smaller if you like
- to keep this vegetarian use vegetable broth.
- for a vegan option: use dairy-free cheese or skip it entirely.
