- 1 large butternut squash peeled, de-seeded, chopped and cut into 2-inch cubes
- 1/4 cup (60ml) water
- salt to taste
- herbs for topping
Instructions
- Wash, peel, deseed and cube the butternut squash.
- Add the butternut squash to the slow cooker, then pour in the water.
- Place the lid on, then cook for 3-4 hours on low or 4-5 hours on high.
- Open the lid and add salt to taste, then mash (do not drain the cooking water).
- Serve Crockpot Mashed Butternut Squash warm and topped with herbs of your choice.
