Ingredients

  • 1 large butternut squash peeled, de-seeded, chopped and cut into 2-inch cubes
  • 1/4 cup (60ml) water
  • salt to taste
  • herbs for topping

Instructions

  1. Wash, peel, deseed and cube the butternut squash.
  2. Add the butternut squash to the slow cooker, then pour in the water.
  3. Place the lid on, then cook for 3-4 hours on low or 4-5 hours on high.
  4. Open the lid and add salt to taste, then mash (do not drain the cooking water).
  5. Serve Crockpot Mashed Butternut Squash warm and topped with herbs of your choice.
