Crockpot Poppy Seed Chicken

Ingredients

  • 1.5-2 pounds boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 8 oz sour cream
  • 1/3 cup chicken broth
  • 3 teaspoons poppy seeds
  • 1/2 cup butter melted
  • 30 buttery crackers crushed

  1. Place chicken breasts into the bowl of your crockpot. Whisk together the cream of chicken soup, sour cream, and chicken broth, then spread over the top of the chicken. Place the lid on the crockpot and cook over low heat for 5-6 hours, or high heat for 3-4 hours (mine is done at 3 hours on high using thawed chicken).
  2. When cooking time is complete, remove lid and shred the chicken with two forks, then mix in the poppy seeds. Combine the melted butter and crushed crackers, then sprinkle over the top of the chicken. Heat the oven to 375 degrees. Remove the the ceramic bowl of the crockpot and place in the oven for 7-10 minutes to help crisp up the cracker topping.
  3. Serve over rice or mashed potatoes. Enjoy!
