Crockpot Soups - Cheesy Ham and Potato

Ham and Potato Soup is an easy comfort soup loaded with cheesy goodness! Add peas or corn to this soup for some added vegetables. A delicious dinner any night of the week!

Ingredients

  • 3 cups ham diced
  • 3 potatoes peeled and diced
  • 30 ounces chicken broth (2 cans)
  • 1/2 cup butter
  • salt and pepper to taste
  • 2 cups milk
  • 2 pounds Velveeta cheese

Instructions

    Cup of Yum
  1. Add all the ingredients EXCEPT the milk and velveeta cheese to a crockpot.
  2. Cook on high for 2 1/2 to 3 hours or until potatoes are tender.
  3. Add in the milk and velveeta cheese. Stir well, and cook for another 10 to 20 minutes or until cheese is fully melted.

Notes

  • Recipe Tips:
  • This recipe is especially good with diced up leftover spiral ham.
  • Add veggies like peas, corn, or broccoli to give the soup added nutrients.
  • Serve with rolls, breadsticks, or corn bread.
