Ingredients

  • 2 cans 16 oz each Great Northern beans, undrained
  • 1 can 28 oz diced tomatoes, undrained
  • 3/4 cup chicken broth
  • 3 carrot peeled and sliced, medium
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon thyme dried
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 package 14-16 oz smoked turkey sausage, sliced
  • 1/4 cup Parmesan Cheese freshly grated

Instructions

  1. Combine the beans, tomatoes, broth, carrots, onion, garlic, salt, thyme, pepper and bay leaf in a 5-quart slow cooker. Cook on the low setting for 4 hours.
  2. Add the sausage to the slow cooker and cook an additional 2 hours, or until the vegetables are soft.
  3. Remove and discard the bay leaf.
  4. Top each serving with Parmesan cheese.
