Adapted from Tartine. This recipe is time consuming and requires a lot of resting and chilling, but it's really not bad if you spread the tasks out over 2-3 days. Plan accordingly. Trust me, it's worth it.

Ingredients
Preferment
- 6 tablespoons milk
- 1 ½ teaspoons active dry or instant yeast
- ⅔ cup all purpose flour
Dough
- 2 teaspoons active dry or instant yeast
- ¾ cup plus 2 tablespoons milk
- 3 cups all purpose flour
- 3 tablespoons sugar
- 2 teaspoons kosher salt
- ½ tablespoon unsalted butter melted and cooled
- 22 tablespoons (2 ¾ sticks) unsalted butter cool but pliable

- ⅓ cup granulated sugar plus more for the pan and dusting finished buns
- ⅓ cup light brown sugar
- 2 teaspoons orange zest optional
- 1 ½ tablespoons cinnamon
- ¼ teaspoon kosher salt
- 4 tablespoons unsalted butter melted and cooled
