Ingredients

Ingredients for salad
  • 2 chicken breast pounded slightly thin
  • salt for seasoning
  • black pepper for seasoning
  • 4 cups baby spinach
  • 1 romaine lettuce chopped, heart
  • 1 red pepper seeded and chopped
  • 1 small cucumber cut into thin rounds
  • ¾ cup sugar snap peas
  • 1 large carrot peeled and then peeled into strips
  • ½ small red onion thinly sliced
  • ¼ cup peanuts chopped
  • 1 TBS sesame seeds
Ingredients for dressing
  • ¼ cup rice vinegar
  • 1 teaspoon ginger chopped
  • 2 TBS soy sauce reduced sodium
  • 1 TBS honey
  • 3 TBS sesame oil
  • ¼ cup vegetable oil or canola oil
  • 3 TBS peanut butter creamy

Notes

  • *The chicken is even more flavorful if you marinate in a teriyaki sauce before grilling, but that is optional.
