Crustless Quiche
Crustless Quiche blends sautéed broccoli, onion, and garlic with a custard of eggs, milk, and cream, enriched by sharp cheddar cheese and savory cooked bacon. Baking in a pie pan until set and golden on top yields a satisfying, protein-rich dish with a tender, flavorful filling without the crust. It can be served warm or at room temperature for breakfast or brunch.
Ingredients
- 1 tablespoon olive oil
- 1/2 yellow onion chopped
- 2 cups broccoli chopped, small florets
- 3 tablespoons water
- 2 cloves garlic minced
- 6 egg large
- 3/4 cup milk whole
- 1/4 cup heavy cream
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 cup cheddar cheese grated
- 4 lices Bacon chopped, cooked
- chives for garnish, optional, chopped
Instructions
- Preheat oven to 375 degrees F. Grease a 9-inch pie pan and set aside.
- In a large skillet, heat the oil over medium high heat. Add onion; cook for 3 minutes, stirring occasionally. Add broccoli and water; cook, stirring, until the broccoli starts to soften, about 3 minutes. Add the garlic and cook for 1 minute. Remove from heat.
- In a large bowl, whisk together eggs, milk, heavy cream, salt and pepper.
- Fold in the broccoli mixture, shredded cheese, and chopped bacon. Spoon into the prepared pie pan.
- Bake for 30 to 40 minutes, or until the eggs are set and the top is golden brown. Remove from oven and garnish with fresh chives, if desired. Let cool 10 minutes before serving.
