Ingredients

  • 4 large eggs
  • 4 large egg whites
  • ¼ cup cold water
  • 1 cup low fat cottage cheese
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • 2 teaspoons minced fresh dill
  • 2 teaspoons minced fresh chives
  • 3 ounces smoked salmon roughly chopped
  • 2 tablespoons goat cheese (chèvre) crumbled

  1. Preheat the oven to 375 degrees F. Light coat a 9-inch pie dish with cooking spray.
  2. In a large bowl, combine the eggs, egg whites, water, cottage cheese, salt and pepper. Whisk vigorously to break up the cottage cheese. Stir in the dill and chives.
  3. Pour the egg mixture into the prepared pie dish. Sprinkle the smoked salmon goat cheese throughout the egg mixture.
  4. Bake until the egg is just set and a small, sharp knife inserted in the center comes out clean, about 35 minutes.
  5. Let the quiche rest for 5 minutes, then cut into 6 wedges. Serve.
