Cuban Black Beans and Rice (Moros y Cristianos)

Cuban black beans and rice are made with peppers, garlic, and Sazon spice for a subtle heat. This simple dish is bursting with Latin flavor!

Ingredients

  • 1/2 lb thick-cut bacon (2-3 slices) cut into 1/4" pieces
  • 1/2 cup green bell pepper chopped
  • 1/2 cup red bell pepper chopped
  • 1 cup white onion chopped
  • 3 cloves garlic minced
  • 1 cup long-grain rice
  • 15 ounces black beans (with liquid)
  • 1 teaspoon Sazon seasoning
  • 1/2 teaspoon ground cumin
  • 1 bay leaf

Instructions

  1. In a Dutch oven or deep skillet, add bacon and fry until brown and crispy. Transfer the bacon to a paper towel-lined plate. Reserve bacon fat in pan.
  2. Transfer green and red peppers and onions to same pan. Sauté for 3 minutes. Add garlic and cook for 1 minute.
  3. Add rice, black beans, 1 1/2 cups water, sazon, cumin and bay leaf. Stir to mix and bring to a boil. Cover, reduce heat to simmer, and cook for 30 minutes.
  4. Remove from heat, keeping the lid on for another 10 minutes. Fluff with a fork discard bay leaf then stir in the cooked bacon.
