Cuban Mojo Marinade Recipe (Mojo Sauce)

This Cuban mojo marinade is made with garlic, sour orange, olive oil and herbs, great for marinating fish, chicken, or pork, or as a garlicky mojo sauce!

Ingredients

  • 10 cloves garlic chopped
  • 1 small onion chopped
  • 1 teaspoon oregano (dried can be used)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt (or to taste)
  • Black pepper to taste
  • 1/2 cup Sour orange juice (or use equal parts orange and lime juice)
  • 1/3 cup olive oil

Instructions

  1. Add the garlic, onion, oregano, cumin, salt and pepper to a food processor and process to form a paste. Alternatively, you can use a mortar and pestle (or molcajete) to grind by hand.
  2. In a small mixing bowl, whisk together the sour orange juice and olive oil until it thickens.
  3. Stir in the seasoned garlic paste until well combined.
  4. Adjust with salt and pepper and use as needed.
