Cucumber Avocado Salad made with crisp cucumbers, creamy avocado, mint, cilantro, red onion, peanuts and simple rice wine vinegar dressing is so refreshing and the perfect side dish to any meal.

Ingredients

  • 2 English cucumber chopped
  • 2 avocado peeled, pitted, and cubed, ripe
  • 2 tablespoons mint chopped, fresh
  • 2 tablespoons cilantro chopped, fresh
  • 1/4 red onion thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons rice wine vinegar
  • 1 clove garlic minced
  • 1 teaspoon honey
  • 1/3 cup peanuts roughly chopped, salted
  • 1 Thai Chili pepper thinly sliced, if desired
  • salt to taste
  • black pepper to taste

Instructions

  1. In a medium bowl, combine the chopped cucumbers, avocados, mint, cilantro, and red onion.
  2. In a small bowl, whisk together the olive oil, vinegar, garlic, and honey. Pour the dressing over the salad and toss until well coated.
  3. Top with chopped peanuts, Thai chili pepper slices, if using, and season with salt and blac pepper. Serve.
