Ingredients
- 2 English cucumbers, sliced
- 3 avocados, cut into chunks
- 1/4 cup red onion, diced
- 1/3 cup cilantro, chopped
- 3 tablespoons olive oil
- 3 tablespoons lime juice
- 1 teaspoon garlic, minced
- Kosher salt and pepper, to taste
Instructions
- In a large bowl, combine sliced cucumbers, avocado, diced red onion, and chopped cilantro. I like to slice the cucumber leaving the skin on!
- In a small bowl, whisk together the olive oil, lime juice, and minced garlic.
- Pour the dressing over the salad ingredients and toss together.
- Season to taste with salt and pepper and enjoy!
