Cucumber Dill Avocado Tuna Salad
Fresh, herby, creamy tuna salad makes lunch times easy and delicious!
Ingredients
- 1 avocado peeled and diced, large
- 2 5- ounce tuna drained, canned
- 1 tablespoon mustard stone ground
- 1 tablespoon lime juice fresh
- 1/8 teaspoon salt to taste, sea salt
- 2 teaspoons dill chopped, to taste, fresh
- 1/2 cup red bell pepper finely chopped
- 1/2 cup cucumber finely chopped
- 1 carrot peeled and chopped (1/4 cup, small
- 1/2 cup green onion chopped
Instructions
- Mash the avocado in a mixing bowl until creamy. Add the tuna, stone ground mustard, lime juice, and sea salt and stir well. Add the remaining ingredients and stir until well incorporated. Taste the tuna salad for flavor and add more sea salt and/or lime juice to taste. Serve on toasted bread or on top of a green salad
