Cucumber Dip

This cool, creamy Cucumber Dip is perfect on gyros, burgers, salads, fish, and raw veggies.

Ingredients

  • 1 English cucumber peeled, seeded, and finely chopped, large
  • 1 cup Greek yogurt plain
  • 1 tablespoon lemon juice
  • 2 teaspoons dill chopped, fresh
  • 2 teaspoons mint chopped, fresh
  • 2 cloves garlic minced
  • salt to taste
  • black pepper to taste

Instructions

  1. Peel and seed the cucumber, then finely chop it.
  2. In a bowl, combine chopped cucumber, Greek yogurt, lemon juice, chopped herbs, minced garlic, salt, and pepper. Adjust seasonings as needed.
  3. Mix well until combined. Cover and refrigerate for about 1 hour to meld the flavors. Serve chilled.
