Cucumber Mint Gin Fizz

Ingredients

  • 4-5 lices of cucumber about 1/4-inch thick
  • 5-6 leaves mint
  • 1/2 ounce fresh lime juice
  • 1/2 ounce simple syrup
  • 1 1/2 ounces gin
  • 2-3 ounces club soda
  • ice

Instructions

  1. In a cocktail shaker, muddle 3 cucumber slices with the lime juice, mint leaves and simple syrup,
  2. Fill the cocktail shaker with ice, add the gin and shake until the outside of the cocktail shaker feels cold to your touch.
  3. Place a fresh cucumber into the bottom of a Tom collins glass ( classic cocktail tall shape) and fill with ice.
  4. Strain the cocktail through the shaker's top, pouring into the glass.
  5. Stir in the club soda, stir and serve.
  6. Garnish with a slice of cucumber if wanted.
