Cucumber Mint Margarita
This cucumber mint margarita is super refreshing and perfect for summer. A classic margarita made with tequila and lime, infused with fresh mint syrup and cucumber slices - you cannot beat this in the summer heat!

Ingredients
- margarita salt for the rim
- Lime wedges
- crushed ice
- 4 ounces tequila (I prefer blanco here)
- 2 ounces fresh lime juice
- 1 ounce mint simple syrup, recipe below
- 1 handful of cucumber slices

- 1/3 cup granulated sugar
- 1/3 cup water
- 1 bunch of mint leaves
Instructions
- Rim two glasses with a lime wedge and dip in margarita salt to coat. Fill the glasses with crushed ice.
- Fill a cocktail shaker with ice. Add in the tequila, lime juice and simple syrup. Add in a few slices of cucumber - this is imperative because as you shake, the cucumber flavor will infuse the drink. Cover and shake for 30 seconds until frothy. Pour the mixture over the crushed ice between the glasses, garnishing with cucumber slices. Top with a sprig of fresh mint and enjoy!

mint simple syrup
- Combine sugar, mint and water together in a small saucepan and heat over medium heat until simmering, stirring continuously. Reduce heat to low and cook until the sugar is dissolved. Set aside to cool completely. Remove the mint before using. You can do this ahead of time and store it in the fridge.
