Cucumber Mojito

The mint oil released from the leaves during muddling, in combination with the cucumber and lime juice give this drink its refreshing aroma and taste.

Ingredients

  • ½ lime juiced
  • ½ lime cut into wedges
  • 3-4 sprigs fresh mint leaves
  • 1 tablespoon Truvia Original Sweetener
  • 1/2 cucumber peeled and pureed
  • ice
  • 2 ounces white rum
  • 4 ounces club soda

Instructions

    Cup of Yum
  1. Puree cucumber in a food processor with the fresh lime juice. Pour into a glass filled with ice.
  2. Gently muddle lime wedges, mint, and Truvia Original Sweetener in the muddler.
  3. Add the muddled ingredients to the glass with rum and club soda.

Notes

  • Mocktail: Just swap out the rum for an extra splash of club soda.
  • This recipe can be increased to make a pitcher and can be made a few hours in advance for a fiesta.
  • White rum can also be sold as "blanco" or "silver," so don't feel confused! Also, be sure you're reaching for regular white rum, not the coconut kind, or you'll risk your drink being far too sweet.
