Ingredients

Make the dressing:
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon shallot minced
  • 2 teaspoons white wine vinegar
  • 2 teaspoons honey
  • 1/4 teaspoon sumac
  • 1/2 teaspoon kosher salt
For the Salad:
  • 1 cucumber thinly sliced, large English
  • 12 radish thinly sliced
  • 3 celery thinly sliced, stalks
  • 1/4 cup dill minced
  • 1/4 cup chive minced
  • 3 tablespoons mint chopped
  • 4 ounces goat cheese (chèvre)

  1. Make the dressing: In a salad bowl, combine olive oil, shallots, white wine vinegar, honey, sumac and kosher salt.
  2. Make the salad: Combine cucumber, radishes, celery, dill, chives, mint in the bowl with the dressing. Toss to combine. Top with crumbled goat cheese, freshly cracked pepper, and a sprinkle of salt. Serve immediately.

  • The salad is best served immediately after tossing to preserve the crisp texture of the vegetables.
