Cucumber Raita

Try this recipe for cucumber raita to make a versatile, Indian-inspired condiment with a cool, creamy texture and fresh, tangy flavor.

Ingredients

  • 1 cup cucumber grated (See Note 1)
  • 1 cup PLAIN yogurt or greek yogurt
  • 1 teaspoon kosher salt
  • ½ tsp ground cumin

Instructions

  1. Grate cucumber over colander and drain in bowl.
  2. Whisk yogurt, salt and cumin to a smooth consistency. If using Greek yogurt, add 1/3 cup water to thin. Whisk until smooth consistency then add salt and cumin, stirring once again to combine.
  3. Squeeze drained cucumber to extract excess water and discard water (or save for other use). Add to the yogurt and mix to combine.
  4. Chill if you prefer and serve with chili powder sprinkled on top.

Notes

  • I prefer using a hothouse cucumber, the long thin skinned ones or the smaller Persian thin skinned cucumbers. Any cucumber will work, this is just a preference.
