Ingredients

  • 2 English cucumber sliced, long
  • 1 red onion sliced, medium
  • ¼ cup white wine vinegar
  • 1 Tablespoon sugar (or coconut sugar or sweetener of choice)
  • ⅓ cup dill chopped, fresh
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  1. Mix cucumber and red onions in a large bowl.
  2. Mix white wine vinegar, salt, pepper, and sweetener in a small jar. Pour over the cucumbers and onions.
  3. Sprinkle some fresh chopped dill and toss to coat.

Notes

  • Lightly salt sliced cucumbers and let them drain 15-60 minutes to remove excess moisture and keep the salad crisp.
  • Use English cucumbers for thin skin and fewer seeds; Persian cucumbers are also suitable.
  • A mandoline or sharp knife ensures even, thin slices of cucumbers and onions.
  • Dress the salad just before serving to maintain the freshest texture.
  • Prepare vegetables and dressing in advance but combine right before serving for best results.
