Ingredients

  • 2 cups cucumber diced
  • 2 cups tomato diced
  • 1 shallot finely chopped
  • 2 cloves garlic minced
  • 1/2 cup cilantro chopped
  • 1 jalapeno pepper diced
  • 5 tablespoons lime juice
  • 1/2 tablespoon olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large bowl, combine cucumbers, tomatoes, shallots, garlic, cilantro, jalapeños, lime juice, olive oil, salt, and black pepper. Toss to mix well.
  2. Cover the bowl and refrigerate for 30 minutes to allow flavors to meld.
  3. Serve the chilled salsa with tortilla chips or as a topping for tacos, salads, or grilled dishes.
