Ingredients

  • 1 cucumber grated and drained, medium
  • 2 cups yogurt plain, Greek
  • 3 cloves garlic minced
  • 2 tablespoons lemon juice fresh
  • 2 tablespoons dill chopped, fresh
  • 1 1/2 tablespoons olive oil
  • 3/4 teaspoon salt sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Grate the cucumber and use a clean cloth to squeeze out excess water. Mince the garlic and chop the dill.
  2. In a bowl, combine the grated cucumber, Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper, and the olive oil. Mix until well combined.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld before serving.
