Ingredients

  • 2 cups Shrimp chopped, cooked
  • 2 cups cucumber English or Persian cucumbers preferred, diced
  • 1 cup red bell pepper diced
  • 1 jalapeno pepper seeds removed and minced
  • 2 tablespoons flat leaf parsley chopped
  • 1 tablespoon mint chopped, fresh
  • 2 tablespoons lemon juice fresh
  • 1 tablespoon olive oil
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste
