Ingredients
- 2 cups Shrimp chopped, cooked
- 2 cups cucumber English or Persian cucumbers preferred, diced
- 1 cup red bell pepper diced
- 1 jalapeno pepper seeds removed and minced
- 2 tablespoons flat leaf parsley chopped
- 1 tablespoon mint chopped, fresh
- 2 tablespoons lemon juice fresh
- 1 tablespoon olive oil
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
