Ingredients

  • 2 avocados
  • 2 large cucumber
  • 4 large tomatoes
  • ½ red onion
  • ¼ cup red wine vinegar
  • ¼ cup olive oil
  • 3 tablespoons lime juice
  • ½ teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper plus more to taste

Instructions

  1. Cut the vegetables into bite sized pieces.
  2. Whisk your olive oil, vinegar, lime juice, salt, and pepper together in a small bowl.
  3. Toss the tomatoes and cucumbers together in a large bowl and then pour the dressing over them, tossing until everything is well coated.
  4. Add the avocado pieces and gently fold into the salad.
  5. Serve immediately.
