This easy-to-make Cucumber Tomato Salad side dish is light, fresh, and goes with everything. It’s a great way to use up all that summer produce for a great summer salad!

Ingredients
- 1 English cucumber chopped
- 10 ounces cherry tomatoes chopped
- 1 red bell pepper chopped
- 1 avocado chopped (optional)
- 1/4 cup finely diced shallot or red onion optional
- salt
- pepper
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- 1 teaspoon dried oregano
- 1 tablespoon fresh parsley
- 1 tablespoon fresh dill
Instructions
- Combine the salt, pepper, olive oil, red wine vinegar, honey, and oregano in a bowl or mason jar. Mix until it's fully combined. I like using a mason jar for this to shake it up to mix.
- In a large mixing bowl, add the cucumber, tomatoes, bell pepper, avocado, and shallot.
- Pour the dressing over the veggie mix and gently mix to combine.
- Top with fresh parsley and dill and gently mix to combine.
- Serve and enjoy!

Notes
- It's important to gently mix the salad so you don't burst the tomatoes and avocado. You want them to remain in firm pieces.
- Using a mason jar for the dressing works great because you can shake to mix it well!
