Ingredients

  • 1 English cucumber chopped
  • 10 ounces cherry tomato chopped
  • 1 red bell pepper chopped
  • 1 avocado chopped (optional)
  • 1/4 cup onion optional, or shallot, finely diced
  • salt
  • black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon oregano dried
  • 1 tablespoon parsley fresh
  • 1 tablespoon dill fresh

Instructions

    Cup of Yum
  1. Combine the salt, pepper, olive oil, red wine vinegar, honey, and oregano in a bowl or mason jar. Mix until it's fully combined. I like using a mason jar for this to shake it up to mix.
  2. In a large mixing bowl, add the cucumber, tomatoes, bell pepper, avocado, and shallot.
  3. Pour the dressing over the veggie mix and gently mix to combine.
  4. Top with fresh parsley and dill and gently mix to combine.
  5. Serve and enjoy!

Notes

  • It's important to gently mix the salad so you don't burst the tomatoes and avocado. You want them to remain in firm pieces.
  • Using a mason jar for the dressing works great because you can shake to mix it well!
