Cucumber tomato salad

Cucumber tomato salad with spicy dressing is one salad that you want to enjoy after having rich food such as chicken kebabs or lamb burger or meat curries. But, having said that, the salad is delicious to enjoy as is. Without any other excuses apart from loving the taste.

Ingredients

  • 2 cups cucumber cubed.
  • 1 pint cherry tomatoes and/or
  • 1 pint plum tomatoes and/or
  • 1 apple I used Granny Smith.
  • 1 cup pineapple cubed.
  • 2 teaspoons chili sauce see the note
  • 2 teaspoons tomato ketchup
  • 1 teaspoon granulated sugar
  • lime juice from half lime
  • salt pinch

Instructions

  1. Cut tomatoes in halves.
  2. Dice the cucumber.
  3. Peel, core and cut the apples in chunks.
  4. Cut the pineapples into small pieces.
  5. Put all the fruits and cucumber in a mixing bowl.
  6. In a small bowl, mix the chilli sauce, tomato ketchup, sugar, salt and lime juice until the sugar dissolves. Try to taste. Your dressing should taste refreshingly tangy, slightly spicy, a little bit salty and sweet.
  7. Pour the dressing in the salad mix. Stir gently and thoroughly.
  8. Enjoy.

Notes

  • You can use any type of tomato you like. Though I use cherry tomatoes and plum tomatoes. If you prefer big salad tomatoes, make sure you deseed them before you cut in small pieces. 
  • Preferably you use Indonesian chili sauce. But Thai sriracha sauce is a good substitute.
