Ingredients
- 4 heirloom tomatoes , cut into 2-inch pieces
- 1 green bell pepper , seeded and cut into 2-inch peces
- 1 medium cucumber , seeded and cut into bite-sized pieces
- 1/2 sweet onion , cut into thin strips
- 2 cloves garlic , minced or pressed
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1/2 teaspoon coarse kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large bowl, toss together the tomatoes, bell pepper, cucumber, onion and garlic. Set aside.
- In a small bowl, whisk together the olive oil, vinegar, honey, salt and pepper.
- Pour over vegetables and toss gently. Cover and chill for 1-2 hours or until ready to serve.
- Toss again lightly before serving to freshen.
