Cucumber Tomato Salad

Ingredients

  • 1 English cucumber
  • 2 large tomatoes (diced)
  • 1/2 red onion (sliced)
  • 2 Tablespoons olive oil
  • 1 Tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 Tablespoon fresh parsley (chopped)
  • 1 Tablespoon fresh basil (chopped)

Instructions

  1. Cut the ends off of the cucumber.  Slice in half lengthwise and cut into approximately 1/2 inch thick slices. 
  2. Place the cucumber, diced tomatoes and slice red onions in a large bowl. 
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt and pepper. Pour this dressing over the vegetables.  
  4. Gently stir in the fresh parsley and fresh basil.  
  5. Refrigerate the salad for at least 30-60 minutes before serving.  
  6. Serve cold and enjoy!

Notes

  • This salad is best served within 1-2 days as the vegetables will get mushy as it sets.
