Cucumber tomato salad with whipped feta
Crafted with ease and taste in mind, this recipe is a great choice.
Ingredients
- 200 g (7oz) feta cheese
- 2 tbsp olive oil
- pinch black pepper
for the salad
- 1 large cucumber peeled
- 500 g (1lb) tomato chopped
- 1 shallot finely sliced
- 1 tbsp lemon juice
- 2 tbsp basil oil or basil pesto
- black pepper to taste
- salt to taste
- basil optional, fresh leaves
Instructions
- Start by making the whipped feta. Combine feta cheese, a few tablespoons of olive oil and a generous pinch of black pepper in a blender.
- Blend until smooth.
- Using a spoon, spread the whipped feta onto a serving plate or bowl.
- Peel the cucumber and chop roughly.
- Slice the tomatoes into rough shapes and thinly slice the shallots.
- Place the cucumber, tomato and shallots on top of the feta and drizzle with lemon juice, basil oil and a generous pinch of salt. Scatter over fresh basil leaves.
- Serve immediately.
