Ingredients
- ½ cup Greek yogurt plain, 2% fat
- 2 Tablespoons mayonnaise
- 1 teaspoon curry powder
- 1 ½ tablespoons mango chutney
- 2 teaspoons lemon juice fresh
- kosher salt
- black pepper
- 3 cups chicken breast cooked; diced or shredded
- ¾ cup red grapes halved
- ⅓ cup scallions chopped
- ¼ cup almonds sliced, toasted
- ¼ cup celery chopped
Instructions
- Mix the yogurt, mayonnaise, curry powder, chutney, and lemon juice together in a large bowl. Season the mixture with a pinch of salt and black pepper.
- Stir in the chicken, grapes, scallions, almonds and celery. Serve chicken salad on a bed of lettuce or use it to make sandwiches, wraps or lettuce wraps. You can also serve it on crackers, crostini, mini croissants or cucumber slices as an elegant appetizer.
Notes
- If using chicken breast instead of rotisserie, poach in lightly salted water or broth with a bay leaf and optional white wine to retain moisture.
- Let poached chicken cool completely before dicing to maintain texture.
